Middle Eats is Obi. They are part Egyptian and part British, and their whole life they have grown up eating delicious food from the Middle East. As they grew up and started cooking for themselves, they realized that there aren’t many easy to follow and authentic recipes out there for Middle Eastern cuisine. Most of the recipes they found were westernized, simplified, or mis-documented, which has resulted in dishes that taste different from their original counterparts. They want to combat this by putting together a catalogue of video recipes, where they break the dishes down into simple and precise steps that will give you a fantastic result each time. As part of their quest, they gather information about the history and origins of each dish, then they test recipes from an array of sources, including friends’ family recipes, original Arabic texts and videos. They then formulate an ingredients list and directions based on: 1- Authenticity 2- Taste 3- Complexity Then they work on turning this into a recipe with precise measurements, and easy to follow steps. Putting together these recipes is a real passion of theirs, and it fills them with joy every time someone tries a recipe and enjoys it. They’d love to do this full time so that each week they could teach you more dishes and help you discover foods you never knew you were missing out on.
